warm butternut squash salad. heaven.

There aren't a lot of photes for this post, mainly because the process is ridiculously simple. Don't let the dish's simplicity fool you, though: warm butternut squash and chickpea salad is heaven on a plate.

Who knew that roasting a butternut (with some allspice, olive oil, salt and garlic) and then mixing it with chickpeas and a lemon tahini dressing would be such magic? EDW and I devoured this, and I'm so glad I have more butternut squashes from my in-laws' and coworker's gardens. I'm seriously considering skipping my other new squash recipes and making this salad on repeat.
